An inventive and gourmet cuisine that draws its inspiration from the forest

Anne-Caroline and Bertrand Frey have thought of everything to nourish minds, hearts, bodies, and of course, without forgetting, stomachs. In the heart of the Esvres-sur-Indre forest, spiritual nourishments go hand in hand with earthly ones. The gastronomic offering has been designed to be inventive and inspired. It is also prolific thanks to the various options provided to adapt to everyone’s desires. There are the seasonal discoveries at Asperatus, the bistronomic spot. Chefs are invited during the beautiful season (starting April 30) and a raclette bar is set up for winter (starting October 24). There is the cozy atmosphere of the bar and its “finger food” that one nibbles with a glass of wine, a cocktail, or a fresh herb infusion, on the terrace or in front of the fireplace.

There is the “In room Dining” where the restaurant comes to your lodge to fully enjoy the nature experience. There is Ardent where chef Thomas Besnault and his teams invite the taste buds of enthusiasts and fine gourmets to a gastronomic and forest initiation. Because after admiring it, listening to it, smelling it, now we taste the forest. This woods chef, who has worked at beautiful tables in the Centre-Val de Loire region, first trained under the starred chef Gaëtan Evrard before taking the reins of the Ardent restaurant in 2023. Properly trained in wild foraging, Thomas Besnault serves up the forest, which transforms during his walks into a true pantry.
